Just write a letter stating that the person work for you, when they started and for how long they have been working with you and sign it.

All you need to do is on your real estate letter head type out a letter confirming she is employed with you and how long she has been employed. Sounds like she needs it for possibly buying or renting a home, something you have to confirm employment for.
